Gin- means selected. We call selected mackerel Gin-saba which have survived after swimming in the preserve without feeding for two weeks.
Our mackerel are less fishy, adequately fat and its texture is not too soft.
Enjoy the tasty fish and seashells brought up in the cradle of a rough Sea of Genkai.

Tataki (broiled) or otsukuri (sashimi) of natural mackerel
Market value
Fishy smell of mackerel is removed or decreased by broiling, so you can enjoy the nice burnt smell and freshness by cooling down and adding citrus flavor. 
Thank you for your making a reservation. Bad weather prevents us from serving fresh fish and seashells. Tataki means broiled. No after-cookig.
Natural horse-mackerel: Tataki (broiled)
Market value
Mackerel and horse-mackerel are easy to go less tasty. Ikidzukuri offers you special fresh taste.
Tataki is dressed with miso, garlic, ginger and green perilla. After-cooking is deep-fried.
